Pear schnapps

High-proof delight

For this fine schnapps you need about 250 g of ripe pears. Wash the pears, cut them into quarters, remove the core and finally cut them into fine slices. Put the slices into a large preserving jar and pour fruit brandy over them until the slices are fully covered. Add six table spoons of lemon juice. Now close the jar carefully and then leave it for two or three weeks. After three weeks at the latest pour the pears with the liquid through a sieve, put the fruits in a linen towel and squeeze the fruits. Add 60 ml of concentrated pear juice to the liquid, let it steep for about 60 minutes and stir well again and again. Then fill the schnapps into bottles and store them in a cool place for about four weeks. Cheers!
