Poire belle Hélène

Who invented it?

If you believe in culinary anecdotes it was the famous chef de cuisine Auguste Escoffier who invented “Poire belle Hélène” and who is reported to be also the creator of “Pêche Melba”. The dessert is supposed to be served for the first time at the premiere of Jacques Offenbach’s operetta “The beautiful Helen” in 1864. Name giver ist the heroine.
